Freezer sizing depends on belt holding capacity, product dwell time, and total cooling load.
Backed by our 20+ year Application Data Library of lab and field freezing curves, we match dwell time to product thickness and temperature. For example, a 100 g chicken drumstick (115 × 60 × 35 mm) freezes to a −18°C core in 57 minutes at −38°C air temperature.
Belt holding capacity equals hourly output multiplied by dwell time. A 5,000 kg/h line with a 30 minute dwell time holds 2,500 kg on the belt.
Total heat load combines product cooling, freezing, and subcooling loads plus fan heat and room heat gain.
