Continuous Proofer

Square’s continuous proofer provides automated fermentation for bread, burger buns, toast, croissants, pastries, and steamed buns.

Inside the stainless steel PIR insulated room, a gentle conveyor carries dough through a stable climate. PID valves hold temperature within ±1°C and humidity within ±3% RH for even yeast rise and smooth dough skin.

Product Features

Why Choose Square's Continuous Proofer

Tight temperature and humidity control, clean rail design, and smooth bakery line transfer.

  • Partial Close Up Of Fermentation Equipment (1)

    Continuous Synchronized Transmission

Continuous conveying replaces manual rack pushing and batch proof rooms, connecting directly with dividers, moulders, and ovens.

  • Partial Close Up Of Fermentation Equipment (2)

    Hygienic Upward Opening Track Design

The upward opening track catches any chain wear inside the rail channel so particles never fall onto dough on lower tiers.

  • Partial Close Up Of Fermentation Equipment (3)

    VFD Control and Easy Adjustment

Variable speed drives (VFD) adjust proofing time from 15 to 90 minutes to match different dough recipes and room conditions.

  • Partial Close Up Of Fermentation Equipment (4)

    Closed Loop PID Climate Control

Low velocity recirculation fans (0.3 to 0.8 m/s at product level) paired with PID modulated steam/mist and heating coils maintain uniform chamber conditions within ±1 to 2°C and ±3% RH.

How Each Subsystem Is Engineered

Open each section below to see how key parts of the proofer work.

Final proofing needs steady temperature, humidity, and gentle air to support yeast rise:

  • Temperature (30 to 38°C, ±1°C): Controls yeast speed. Too cool slows rise; too warm causes dough collapse.
  • Humidity (75% to 90% RH, ±3% RH): Keeps dough skin soft so loaves expand without cracking or sticking to pans.
  • Gentle Airflow (0.3 to 0.8 m/s): Low air speed prevents dry spots across all belt tiers.

Conveying geometry is selected according to dough hydration and product format:

  • Stabilized Tray / Pan Carrier Conveyor: Holds baking pans, tins, or peelboards completely level through vertical and horizontal turns; ideal for high volume pan bread, burger buns, and delicate pastries
  • Stainless Steel Wire Mesh Belt: Conveys hearth rolls, bagels, or formed dough pieces directly on an open stainless steel spiral or tunnel belt
  • Nonstick Modular Plastic Belt: Low adhesion food grade polymer links engineered for high hydration or sticky dough formulations

We match the humidification system to your steam supply and water quality:

  • Clean Steam Injection: Filtered low pressure steam gives fast humidity response and clean sterilization
  • Ultrasonic Mist: Creates fine 1 to 5 μm water mist with low power use
  • Micro Mist Nozzles: High pressure spray nozzles with droplet catchers inside the air mixing duct

The continuous proofer synchronizes upstream dough makeup with downstream baking:

  • Upstream Makeup Interface: Receives panned or free standing dough pieces directly from dividers, rounders, intermediate proofers, and moulders
  • Downstream Oven Transfer: Discharges proofed dough smoothly to scoring, seeding, or egg wash stations and directly into the continuous tunnel or spiral oven
  • Master Line Speed Synchronization: PLC encoder feedback automatically adjusts proofer conveyor speed to match upstream makeup and oven baking rates

Optional dual mode climate packages combine refrigerated dough retarding with heated final proofing in a single enclosure:

  • Chilled Retarding Mode (+2°C to +8°C): Slows yeast fermentation for extended holding or multiple stage artisan dough development
  • Automated Retarding to Proofing Transition: Programmable PLC recipes transition smoothly from cold retarding to warm humidified proofing
  • Footprint Consolidation: Eliminates intermediate transfer handling between separate retarder and proofer chambers
