Project Overview

Squareย Technology Group delivered a complete fried chicken nugget processing line up to spiral freezing (including compressor units) for a customer located in the Chicago, Illinois area, USA. The customer specializes in large-scale production of battered and fried chicken nuggets for foodservice and retail markets.

The objective of this project was to establish a highly automated, continuous, and stable production line that ensures consistent product quality while meeting high capacity and food safety requirements typical of the North American market.

Customer Requirements

The customer required a turnkey solution capable of:

  • Producing uniformly coated and evenly fried chicken nuggets;
  • Maintaining precise frying and freezing parameters for product consistency;
  • Integrating frying, cooling, freezing, weighing, and packaging into one continuous process;
  • Supporting long-term, reliable operation with industrial-grade refrigeration performance.

Process Flow

The supplied production line follows the process below:

  1. Meat Feeding Machine
    Raw chicken meat portions are automatically fed into the processing line at a controlled and consistent rate.
  2. Flouring
    Nuggets are pre-dusted with flour to improve adhesion of subsequent coatings.
  3. Vibratory Breading Distribution
    Excess flour is evenly distributed and recycled to ensure uniform coverage and reduce waste.
  4. Tempura Batter Application
    A tempura batter system applies a light, even coating to achieve the desired texture and appearance.
  5. First-Stage Fryer (Tempura Fryer)
  • Frying temperature: 392ยฐF (200ยฐC)
  • Frying time: 22 seconds
    This stage sets the coating structure and initial color.

    1. Second-Stage Fryer (Tempura Fryer)
  • Frying temperature: 392ยฐF (200ยฐC)
  • Frying time: 44 seconds
    This stage completes cooking and develops final color, crispness, and flavor.

    1. Ambient Cooling Conveyor with Fans
      Products are conveyed through an ambient cooling section equipped with fans mounted above the belt. This step reduces surface temperature, stabilizes the coating, and lowers the thermal load entering the freezer.
    2. Spiral Freezer (Including Compressor Units)
  • Freezing temperature: -37ยฐC (-34.6ยฐF)
  • Dwell time: 45 minutes
    The spiral freezer rapidly freezes the fried nuggets, locking in moisture, texture, and appearance while ensuring individual piece separation.

    1. Weighing System
      Frozen products are accurately portioned to meet packaging weight requirements.
    2. Packaging
      Nuggets are automatically packed for distribution to retail or foodservice channels.
