An industrial continuous fryer is a sophisticated cooking device utilized in food processing facilities to fry products continuously on a large scale. Unlike traditional batch fryers, which fry food in individual batches, a continuous fryer operates by continuously moving food through a heated oil bath, allowing for the frying of large quantities of food without interruption. The capacity is normally between 500kg to 2500 kg/hr.

These fryers are commonly used in food industries such as chicken nuggets, shrimps, meat balls, etc. The system is meticulously designed to ensure even cooking by maintaining a consistent temperature and oil flow, often incorporating automated features for monitoring temperature, oil quality, and food movement.

Conveyor system:

Food items are transported along a conveyor belt through the fryer.

There are lateral sediment and longitudinal scrapers to remove the sediments from the bottom of the fryer and keep the oil clean.

A separate oil filter can be chosen by the users to further filter the oil without stopping the production.

The filter plate fineness reaches up to 400 microns. The scrapping square rod removes the sediments that cannot pass through the filter plate outside the fryer. The sediment-receiving conveyor belt carries the sediment to the collecting tray.

Heating system:

Electrical Heaters: The continuous fryers can have electrical heating elements, which are submerged in the oil. These elements heat up and transfer their heat directly into the oil. PID for precise temperature control. Advanced solid-state relays (SSR) are used to enhance the reliability and durability of electrical elements. Heating elements are arranged horizontally. The large heat exchange surface of the heating rod ensures quick and even heating.

Heat Exchange Systems: In this setup, the oil passes over a tube coil heat exchanger that is heated by thermal oil circulating through it. The thermal oil is heated by a separate boiler with natural gas.

Temperature control: The fryer is equipped with programmable controls and sensors to adjust cooking parameters. Temperature sensors monitor the temperature of the oil and regulate the heating elements to maintain a consistent frying temperature. This ensures that the oil stays within the optimal range for frying and prevents overheating.

Cleaning-CIP (Clean-In-Place) system

The CIP system for fryer allows the fryer to be cleaned without disassembling it, minimizing downtime and labor costs while ensuring thorough cleaning of the fryer. The standard CIP cleaning process typically for a continuous fryer includes Pre-Rinse, Cleaning with chemical detergent, and Final Rinse.

Typical applications of continuous fryer

Chicken nuggets (flash fry)

Flash frying is very common to fry the nuggets to around 40 to 50C in a continuous fryer, ensuring that the nuggets are cooked rapidly and consistently to achieve that crispy golden exterior.

Fried shrimps

The continuous fryer system ensures that the tempura shrimp are uniformly fried and that the batter remains light and crispy by maintaining consistent temperature control throughout the frying process.
