After steaming, dumplings exit the cooker at approximately <strong>80\u00b0C<\/strong>&nbsp;and must undergo staged cooling before final freezing to ensure product quality and surface integrity.<\/p>\n\n\n\n<p>To achieve optimal results, Square designed a <strong>two-stage spiral system<\/strong>:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Ambient Spiral Cooler (Plastic Belt)<\/li>\n\n\n\n<li>Spiral Freezer (Stainless Steel Belt)<\/li>\n<\/ol>\n\n\n\n<p>In addition to the freezing equipment, Square also supplied the complete refrigeration package using Bitzer compressor units.<\/p>\n\n\n\n<p><strong>Process Flow<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Steamer (by others)<br>\u2192 Ambient Spiral Cooler (80\u00b0C \u2192 40\u00b0C)<br>\u2192 Spiral Freezer (40\u00b0C \u2192 Core temperature -18\u00b0C)<\/p>\n\n\n\n<p><strong>Stage 1: Ambient Spiral Cooling<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Freshly steamed dumplings at approximately 80\u00b0C enter the first spiral system equipped with a <strong>plastic modular belt<\/strong>.<\/p>\n\n\n\n<p>The purpose of this stage is to naturally cool the dumplings down to approximately <strong>40\u00b0C<\/strong>&nbsp;before entering the freezer.<\/p>\n\n\n\n<p><strong>Why Plastic Belt Was Used in the Ambient Cooler<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Two important engineering considerations determined the belt selection:<\/p>\n\n\n\n<p><strong>1\ufe0f Prevention of Black Wear Debris<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Under ambient temperature conditions, friction between:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Correia de a\u00e7o inoxid\u00e1vel<\/li>\n\n\n\n<li>Polymer guide rails<\/li>\n<\/ul>\n\n\n\n<p>can generate black wear particles. These particles may contaminate food products.<\/p>\n\n\n\n<p>Plastic modular belts significantly reduce friction-related debris generation in room-temperature environments.<\/p>\n\n\n\n<p><strong>2\ufe0f<\/strong><strong>&nbsp;<\/strong><strong>Protection of Product Surface<\/strong><strong><\/strong><\/p>\n\n\n\n<p>At high temperatures (~80\u00b0C), dumplings are soft and delicate.<\/p>\n\n\n\n<p>When placed directly on stainless steel mesh belts, the uneven mesh structure may leave imprint marks on the dumpling surface.<\/p>\n\n\n\n<p>Plastic modular belts provide:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>A flatter contact surface<\/li>\n\n\n\n<li>More uniform support<\/li>\n\n\n\n<li>Reduced risk of surface marking<\/li>\n<\/ul>\n\n\n\n<p>This ensures excellent product appearance and premium quality.<\/p>\n\n\n\n<p><strong>Stage 2: Spiral Freezing<\/strong><strong><\/strong><\/p>\n\n\n\n<p>After cooling to approximately 40\u00b0C, the dumplings enter the spiral freezer.<\/p>\n\n\n\n<p>For the freezing stage, Square selected a <strong>standard stainless steel belt<\/strong>.<\/p>\n\n\n\n<p><strong>Why Stainless Steel Belt Is Suitable in Freezing Conditions<\/strong><strong><\/strong><\/p>\n\n\n\n<p>1.Reduced Friction in Low Temperature<\/p>\n\n\n\n<p>In freezing environments, friction between the stainless steel belt and polymer guide rails is significantly lower.<br>No black debris is generated under low-temperature operation.<\/p>\n\n\n\n<p>2.No Surface Imprint Risk<\/p>\n\n\n\n<p>Since the dumplings are already cooled to around 40\u00b0C before entering the freezer, their structure is firmer and more stable.<\/p>\n\n\n\n<p>Even when using a stainless steel belt, no imprint marks occur.<\/p>\n\n\n\n<p><strong>Freezing Performance<\/strong><strong><\/strong><\/p>\n\n\n\n<p>The spiral freezer successfully reduces the dumpling core temperature Design<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Square Technology also supplied the refrigeration package using <strong>Bitzer compressor units<\/strong>.<\/p>\n\n\n\n<p><strong>Special Climate Consideration \u2013 Chicago Winter<\/strong><strong><\/strong><\/p>\n\n\n\n<p>Due to the cold winter climate in Chicago, special attention was given to the <strong>evaporative condenser system<\/strong>.<\/p>\n\n\n\n<p>To ensure stable operation during low ambient winter temperatures:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>An additional heater set was installed in the evaporative condenser<\/li>\n<\/ul>\n\n\n\n<p>This enhancement prevents freezing risks and ensures reliable winter operation.<\/p>\n\n\n\n<p><strong>Project
